Crispy Panko/Italian Chicken


So, in order to save money and my diet Will and I decided that every other week or so I will cook dinner instead of us going out to eat. I enjoy cooking and trying new recipes so I thought this was a great idea. Too bad we can't have a healthy diet of sweets because, although I like cooking, I LOVELOVELOVE baking. Anyway, this past Thursday I decided to try this Weight Watchers recipe my mom gave me for Crispy Panko Chicken:

½ c Panko bread crumbs
¼ c shredded Parmesan
(1 T olive oil, ½ t salt, ¼ t pepper,
2 T Dijon mustard, 1 T water)
¾ lb chicken breasts, pounded to ¼ inch

In a shallow dish, toss together Panko,
cheese, olive oil, salt & pepper. In another dish,
combine mustard, & water. Coat chicken breast
in mustard mixture & dredge in Panko mix. Bake
on a sprayed baking sheet 25 – 30 min @ 400
or until golden brown

This recipe was super easy and super yummy! I made some caramelized carrots and mashed potatoes to go as the sides. My boyfriend is a pretty picky eater but he really liked it, too! I made so much I was absolutely STUFFED by the end of it. I will definitely be making this again!
